Vegan Cookie Cream Cheesecake that melts in your mouth!

If you love Cheesecakes, you have got to try this Vegan version by Shibani Bagaria. Creamier, healthier and cheesier than ever! I have fallen in love with this Vegan Cookie Cream Cheese Cake! My sweet tooth is calling out already. The only reason keeping me away from cheesecake was the dearth of vegan friendly recipes on internet. Looks like I can finally munch on one without worrying over what’s in it.

This Vegan Cookie Cream Cheesecake is pure decadent bliss. Ultra light texture that melts in our mouth, heavenly sweet aroma, and the legendary creamy renaissance on your palates- what’s not to love about cheesecakes. Try this vegan version that recreates the same cheesy love!!

Ingredients

For the crust:

For the cheesecake

  • 2 cups cashews (soaked overnight)
  • 2 tablespoon Vanilla extract
  • 50 grams Soy cream
  • 1/4 cup Maple syrup
  • 50 grams Vegan dark chocolate
  • Some crushed vegan cookies

Instructions to bake Vegan Cookie Cream Cheesecake

  • Finely blend the cookies in a mixer adding vegan butter or coconut oil in between. The goal is to mix vegan butter/ coconut oil evenly with the cookies.
  • Get the cheesecake mold ready by greasing it with coconut oil. Pour the blended cookie mixture into it. Press the mixture well to set it evenly against the mold. Let it sit in refrigerator for a while.
  • Blend cashews along with some soy cream, maple syrup and a few drops of vanilla extract in the blender till it reaches fine consistency. 
  • Divide the mixture into two separate bowls. Add some crushed cookies in one and melted vegan dark chocolate into another. Mix both evenly.
  • Take the tin mold out from the refrigerator. Spread an even layer of crushed cookie mixture over it and proceed with adding another layer of melted chocolate over it. Exercise caution; proceed very slowly and gently.
  • Let it set for at least 4 hours in the refrigerator.
  • When nicely set, open the tin and garnish with some crushed vegan cookies. Your Vegan Cookie Cream Cheesecake is ready!
