Vegan Falafel Wrap Recipe

Ingredients

For Wrap

  • 2 cups flour
  • A pinch of salt
  • 2-3 tablespoons olive oil
  • 1.5 cup of warm water

For Falafels

  • 200 grams chickpea (soaked overnight)
  • 1 finely chopped onion
  • 10-12 garlic cloves
  • 1 finely chopped bunch of coriander leaves
  • 1/2 tablespoon cumin seeds
  • Salt to taste

For Hummus

  • 200 grams soaked and completely boiled chickpeas
  • 10-12 garlic cloves
  • A quarter cup of olive oil
  • 2-3 tablespoons of roasted white sesame seeds
  • 5 tablespoons of lemon juice
  • Salt to taste

For Wrap Filling

  • 1 capsicum (shredded)
  • 1 cucumber (shredded)
  • 1 onion cut (shredded)
  • Some cabbage leaves

Instructions

  • Prepare a soft dough by mixing all the ingredients mentioned under the ‘for the wrap’ heading. Let it set for 15 mins. 
  • Blend together the ingredients mentioned under the ‘for falafels’ heading. Make a coarse paste (Do not add water). Make small 1 cm thick balls of this paste. Deep fry them in a skillet, on a medium flame, using vegetable oil. Keep the Falafels aside.
  • Finely blend together all the ingredients mentioned under the ‘for hummus’ heading. Make a smooth paste. If required, add more olive oil for smoother consistency but do not add water. Let the hummus chill in the refrigerator for a while.
  • Now with a rolling pin, make round tortillas and cook them on a pan from both sides till medium golden.
  • Spread some hummus on the tortilla and sprinkle the shreds of capsicum, onion, and cucumber on it. Next, place the falafels on it and put a little more hummus on them. Place the cabbage leaf over it and fold the tortilla to create a wrap and toast it a little.
  • Relish the wrap with hummus. Top with a little olive oil for an extra dose of flavor.
