Vegan Indian Snack: Vada Pav
Indian cuisine handles the on-the-go dishes very well. From handmade raw-banana chips to a variety of mixtures created on spot, there’s a lot of readily available snacks to choose from. Today, I am sharing one of my favorite on-the-go dishes: the Vada Pav. Although it’s not popular in my hometown, I make this famous Mumbai street food at home.
The word “Vada” means patty, and “Pav” means bun(s). This is an incredibly famous food in India and folks devour the dish from the street-side vendors of Mumbai.
It may sound intimidating to prepare the Tikkis or the patties at first, but trust me, it is very easy. After each ingredient is ready you will assemble the parts much like a burger, save a few ingredients.
You Will Need:
Burger buns (of course)
Vegan Mayo (optional)
For the Tikki or Patty:
2 large potatoes boiled and mashed
Parsley sprigs- ½ cup
Grated ginger- 1/4th teaspoon
Cumin powder- 1 ½ teaspoon
Dried mango powder- 1/3rd teaspoon
Red chili powder- ½ teaspoon
Lemon juice- 1 teaspoon
Salt to taste
For the Sauce or Chutney:
Cilantro leaves- 1 bunch
Green chillies- 1 whole
Cashews- 4 to 5
Sugar- three pinches to be precise
Lime juice- 1 tablespoon
Salt to taste
Procedure to Build the Patties:
First, add salt to the mashed potatoes while it is still warm. Then mix in the chopped parsley, cumin powder, dried mango powder, chili powder and lemon juice. Check the salt once combined and divide the potato mash into small equal portions. Two large potatoes should yield three patties depending on the diameter. Roll each ball and flatten to form a patty.
Heat some oil in a pan and shallow fry the patties until golden brown on both sides. If you feel that your patties are too soggy, coat with dry corn flour to help retain the shape. The outer layer of the patty must be crunchy and crisp.
How to Prepare the Sauce:
Grind the cilantro, chili, cashew with salt and lime juice. Blend until you get a smooth mixture. Taste while making and you can adjust the zinginess or tanginess by adding or removing lemon juice and salt based on your preference. Set aside.
Assembling the Indian snack, Vada Pav:
Heat a frying pan. Melt vegan butter and toast the flat sides of the burger buns. Once toasted to your liking, remove from flame and begin with the assembly.
First, smear the green sauce that you prepared on the lower bun. Place the prepared patty and add the optional vegan mayo and cheese on top. Next, add tomato ketchup and another layer of lettuce, and finally, close off with the top bun.
Try the freshly prepared Vada Pav and enjoy! You will instantly fall in love with the soft potato patty in combination with the mouth-watering green sauce (chutney). Did you like the recipe? Let me know in comments.
