One-Pot Pasta- The Ultimate Vegan Comforter

Have you ever felt so low that nothing else seemed to matter? And then your mom brings you a big bowl of steaming goodness. Something that instantly lit your mood and all your worries just vanished away… Yes, that is the power of food. Let’s say your favorite food. It has healing properties. 

One of my favorite food is a one-pot meal. There are many varieties of the one-pot meal I adore, but today I will be sharing a soul-comforting one-pot pasta recipe. Get into making.

Pasta in any form allures the kid out of me. Be it veg tossed or boiled with sauce; I have a soft corner for pasta always. This particular recipe is a fusion of the original version. In fact, I do not always stick with the original version. I keep adding things I love into the food I want to eat, and this way (sometimes to my surprise) I land on something relishing. This is one such simple food that can light you up on any gloomy day, provided you prefer pasta. The ingredients are simple and readily available always.

One-Pot Pasta Recipe

Ingredients

  • Spaghetti pasta– one portion
  • Cherry tomatoes– 6 to 7
  • Tofu- ½ cup
  • Bell peppers- ½ cup
  • Mushrooms- ½ cup
  • Olive oil- 1 tablespoon
  • White pepper- ½ teaspoon
  • Freshly plucked basil– 3 to 4 leaves
  • Ginger- 1/4th inch grated
  • Salt- to taste
  • Brown sugar– ½ tablespoon
  • Orange juice- two teaspoons (if available)
  • Light soy sauce- 1 teaspoon
  • Any variety of vegan cheese
  • Water as required

How to Prepare:

Dear vegan foodies, this is called a one-pot pasta recipe not without reason. You will literally have to put all the ingredients in a thick bottomed pan and pour enough water to cover up all the ingredients and just relax.

Therefore no step-by-step guide. Let it simmer in for about 20 minutes until the spaghetti is cooked with the juices of all other ingredients.

There is one cheat step that I do– when I use mushrooms I usually sauté it with a dash of sesame oil before adding it to the pot. And I usually add the cheese after I turn down the gas and keep it covered for the steam to melt it.

My favorite vegan cheese for this recipe is a cashew ricotta variety. It complements the flavors of the dish wonderfully well.

The end product is a beautifully done pasta which is perfectly mushy. If the water dries out while cooking, add vegetable-stock to retain the moisture. The one-pot pasta gets better with practice.
