Delicious Valentine’s Day Pink Smoothie Bowl

Pink smoothie bowl recipe to help you stick to your diet while still keeping up with the V-Day spirit.

If you’re like me, all of these delicious Valentine’s Day recipes that have been floating around, have been tempting you to break your good track record of sticking to your diet. Although it is definitely important to treat yourself once in a while (and V-Day is a great excuse to cash in on one of those days), maybe you’re going to save your cheat meal for eating alongside your children and significant other. This pink smoothie bowl is a great way to get your fruit in early as well as a sneaky method to take-in your post-workout protein if you’re sick of protein shakes. This cute bowl is also perfect for a lazy Sunday breakfast and your kids will be sure to love it more than they love Jamba Juice. Here’s a healthy pink smoothie bowl recipe that will still keep you in the Valentine’s Day spirit.

Delicious Valentine’s Day Pink Smoothie Bowl

Ingredients:

  • 1 frozen banana
  • ½ cup chopped frozen strawberries
  • ½ cup unsweetened coconut milk (you may need more depending on your desired consistency)
  • ½ scoop vanilla vegan protein powder (I like Vega)
  • fresh strawberries
  • vegan granola (easy to make at home)
  • shredded coconut
  • sliced almonds  
  • chia seeds

Instructions:

  1. In a blender (I use a Nutribullet), add in your frozen banana (quartered), chopped frozen strawberries, and unsweetened coconut milk.
  2. Blend until you have a scoopable consistency. If you want to make it a thinner consistency (for drinking it normally, for example) little by little add in more coconut milk and reblend.
  3. (optional) Add in the protein powder and blend one last time. Any white-colored vegan protein powder works as long as you want to keep the bowl pink.  
  4. Scoop the “smoothie” into a bowl and top with any fresh fruit, nuts, seeds, or other toppings of your choice.
  5. (optional) My favorite toppings to add to this smoothie bowl are fresh strawberries halved (which makes them look like hearts!), shredded coconut, vegan granola, sliced almonds, and chia seeds.
  6. Serve immediately and enjoy alone or with a side of avocado toast for a good post-gym meal.
