Delicious Vegan Zucchini Cheddar Drop Biscuits
Growing up with a southern mom, biscuits were a staple in our house. My mom would sit me down at my little tike table and dust it with flour. She provided me with the essential tools everyone needs to carry out a perfectly round biscuit.
A bowl of handmade sticky white dough, a squeaky wooden rolling pin, and a mason jar to use for hacking the biscuit form.
After they were placed in the oven, I would sit nose to door for the longest 15 minutes of my life. The smell of freshly baked drop biscuits in our house was equally as comforting as fresh baked cookies.
Although my oldest is too young to sit at a table to roll out the dough and cut it, with this recipe she can still help. these zucchini cheddar drop biscuits are perfect for her little helping hands.
She can simply scoop the dough and drop it on the pan. She loves to be in the kitchen with me and every opportunity to have her with me is a great bonding time.

Yield: 10 Biscuits
Ingredients:
- 2 cups unbleached all-purpose flour
- 1 tbsp baking powder
- 2 tsp garlic powder
- ½ tsp salt
- 2 tbsp vegan butter
- ¾ cup plant milk
- 1 tbsp apple cider vinegar
- 1 cup grated zucchini
- ¼ cup vegan shredded cheddar cheese
Instructions:
- Preheat oven to 425 degrees. In a small bowl whisk together, milk and apple cider vinegar; set aside.
- In a separate bowl mix together flour, baking soda, salt, and garlic powder. Cut in butter using a fork to until crumbly.
- Create a well in the middle in the middle of the flour mixture and slowly stir in milk. Stir until the dough comes together. (dough will be sticky and moist)
- Fold in zucchini and cheddar cheese until thoroughly combined.
- Drop 1/4 cup of dough onto parchment paper lined baking sheet and cook for 15 -17 minutes or until golden brown.
