Deliciously Irresistable Vegan Spaghetti And Meatballs Recipe

This vegan spaghetti and meatballs really hits the spot when you want comfort food. They’re easy to make and always go down a treat.

Ingredients

For the meatballs

  • 1 15oz can kidney beans
  • 1 large clove garlic, minced
  • ½ diced onion
  • ½ tbsp olive oil
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tbsp tomato paste
  • 1 tsp soy sauce
  • ½ cup rolled oats
  • ⅓ cup sunflower seeds
  • Salt and pepper to taste

For the sauce

  • 1 onion diced
  • 1 large clove garlic, minced
  • 1 carrot, cut into small pieces
  • 1 can diced tomatoes (or you can use fresh)
  • 1 tbsp tomato paste
  • ½ tbsp olive oil
  • 1 tsp oregano
  • Fresh basil to garnish
  • Salt and pepper to taste

Method For Your Vegan Spaghetti and Meatballs

  1. Cook the spaghetti according to instructions on the package.
  2. Rinse and drain your kidney beans, put them in a bowl and mash with a fork or potato masher.
  3. Heat a medium pan on the oven and heat the oil. Saute the onions until they turn translucent. Add in the minced garlic and cook for an additional 1-2 minutes.
  4. Place your sunflower seeds into a food processor and use the pulse setting until they have turned into a fine meal.
  5. Add the sauteed onions and garlic to the bowl with the beans and add in the tomato paste, spices, sunflower seeds, oats, and soy sauce. Use your hands to thoroughly mix everything together and form your meatballs for your vegan spaghetti and meatballs.
  6. Preheat your oven to 350 F and then bake your meatballs for approx 15 minutes, flipping halfway through.
  7. In another pan begin making your sauce. Heat the oil and add in the onions and garlic and saute until the onions become translucent.
  8. Add in the carrots and cook for a further 3-4 minutes. Stir in the tomato paste.
  9. Add the diced tomato to your pan and simmer for approx 10 minutes. Season with oregano, salt, and pepper to taste.
  10. Serve your vegan spaghetti and meatballs topped with the sauce. Top with vegan parmesan cheese and fresh basil.
