by | March 9, 2019

Looking for a fairly easy Irish vegan boxty recipe for this St. Patrick’s Day? Here’s how to make it for your family…

It’s no secret that I’m Irish, and following along with stereotypes, I love potatoes. I have yet to meet a potato dish that I didn’t like. Mashed, fried, scalloped, you name it. If there’s potatoes involved, I’m all in. With St. Patrick’s Day almost upon us, I thought I would share with you, one of the most requested dishes in my house. I probably get asked to make these once a week, my kids absolutely love them.
