It’s no secret that I’m Irish, and following along with stereotypes, I love potatoes. I have yet to meet a potato dish that I didn’t like. Mashed, fried, scalloped, you name it. If there’s potatoes involved, I’m all in. With St. Patrick’s Day almost upon us, I thought I would share with you, one of the most requested dishes in my house. I probably get asked to make these once a week, my kids absolutely love them.

Makes: 4/5 potato pancakes
Prep time: 10 min
Cook time: 45 minutes

Ingredients:

  • 4 Large Potatoes
  • 3 Tbs olive oil
  • 2 Tbs plain flour
  • Salt & pepper
  • 1 cup schooped scallions

Directions:

  1. Wash and peel the potatoes
  2. Put two of your potatoes into a pot of water to boil and mash when ready.
  3. Grate the other two potatoes into a large bowl.
  4. Put the grated potatoes into a tea-towel and squeeze out all the liquid until the potato gratings are dry.
  5. Combine the grated mashed potatoes in a bowl and add salt, pepperand chopped scallions.
  6. Add a tablespoon of flour into the potato mixture a mix with your hands until you have a potato dough.
  7. Sprinkle some flour on a clean, dry counter and knead your dough for a couple of minutes.
  8. Using a floured rolling pin roll out the dough and cut into squares. Roll it out to whatever thickness you want.
  9. Heat olive oil in a hot frying pan and add your potato pancakes to the pan. Brown each side and lower the heat and cook slowly, around 10-15 minutes depending on how thick your boxty cakes are.

Serve with vegan sausages for breakfast or with beans for dinner.
