Vegan Bread Pudding Recipe – Great for Brunch

by | February 28, 2019

Bread pudding is a yummy, warm brunch dish. This vegan bread pudding recipe is easy to follow, and simple to make. If you have bread that is on it’s way to getting stale, bread pudding is a great way to use it up. I like to mix this dish up ahead of time and then just whack it in the oven on a weekend morning.

Ingredients

  • 4 cups day-old bread pulled apart into chunks
  • 3 cups of non-dairy milk (I like to use vanilla for the added flavor)
  • 3/4 cup sugar
  • 1 tablespoon vanilla
  • 1 tablespoon ground cinnamon
  • 1 cup raisins
  • 1/2 cup chopped walnuts

Instructions

Pre-heat the oven to 350 F.

Put the chunks of bread into a 9-inch square baking pan.

Stir the non-dairy vanilla flavored milk, sugar, vanilla, cinnamon, raisins and walnuts in a separate bowl.

Pour the ingredients over the bread and give a good stir to mix.

Bake for about 30 minutes.
