Vegan Tempeh “Beef” with Broccoli

by | April 15, 2019

Chinese takeout is probably one of the most comforting foods out there. Fresh steamed rice, salty sauces and crisp vegetables all packaged tightly in a little white box with a metal handle that you can perfectly pinch between your fingers. If I could order it every night I would, but it can definitely get expensive and sometimes you want a little more protein added to your dish. This recipe is a great combo of delivery meets homemade. I used vegan tempeh to replicate beef, and the sauce is a nice rounded-out brown sauce. The broccoli still has a slight crunch, and when you top all of this on some sticky rice, you have a great rendition of “beef” and broccoli made at home.

Vegan Tempeh “Beef” with Broccoli

  • 8 oz. broccoli florets
  • 8 oz. tempeh
  • 1/2 cup tamari
  • 1 tbsp lime juice
  • 2 tbsp maple syrup
  • 1 tsp garlic, minced
  • 1 tbsp cornstarch
  • 1/4 cup water
  • 1 cup jasmine rice
  • 1/4 cup green onion, diced
  • Salt to taste

  1. Slice tempeh into 16 equal pieces and place in a dish for marinating.
  2. In a small bowl, whisk together tamari, lime juice, maple syrup, garlic and cornstarch. Pour mixture over tempeh, place in the refrigerator, and let it sit for about 15 minutes.
  3. While the mix is marinating, heat a large nonstick frying pan over medium heat. Once hot, add in marinated tempeh side by side and pour sauce on top.
  4. Sauté tempeh over medium heat for about 3 minutes and then flip to sauté for an additional 3 minutes.
  5. Remove tempeh slices from pan and pour in 1/4 cup water. Add broccoli, cover, and simmer for 5 minutes. Remove from heat.
  6. In a large bowl, add rice, tempeh and broccoli. Pour remaining sauce over rice. Salt to taste and top with green onions.
