A Quick And Delicious Snack: Vegan Chickpea Egg Salad Sandwich

by | February 17, 2019

Sandwiches are without a doubt one of the easiest (and most delicious) lunches to pack for a work lunch or with your kid to school. They are comfort food for many but unfortunately, it can be hard to get a good amount of protein in a sandwich without using meat alternatives. However, this chickpea “egg salad sandwich” is full of protein (chickpeas contain 39g of protein per cup!) and can be used on sandwiches, in wraps, or even in a salad. Make a batch on meal-prep Sunday, and enjoy for the next few days.

Here is how you can make vegan chickpea egg salad sandwich at home.

You left out or missed a key ingredient . Black salt. It’s actually pink but just a small pinch sends an “egg”” sandwich over the top. You’ll be shocked using it. You’d think it was actually egg.

P.S. the black salt is also a key ingredient with corn starch, water , a pinch of turmeric and heated to make a wonderful “egg” dipping sauce for toast or drizzled on veggies like a hollandaise sauce.
    Get the black salt!

I’m looking at a can of Eden chickpeas and it’s 7 G protein per half cup. I don’t know what source you used for that 39 g per cup, but it’s not correct.
