The Recipe

This tasty, and absolutely amazing, chickpea pancake recipe uses minimal oil, and it will sneak all the power-packed, nutritious veggies you child needs. Chickpea flour is a great source of dietary fiber. It is also rich in manganese, and folate (essential for brain development and healthy cell and tissue growth). Adding chickpea flour to your kid’s menu once a week is a very healthy option. The added veggies in this recipe are also a good source of fiber, vitamins, and minerals. Why wait? Let’s get cooking a nutritious breakfast for your vegan kids.

Ingredients:

  • Chickpea flour: 2 cups
  • Broccoli: 5 florets
  • Cauliflower: 3 florets
  • French beans: 2 whole
  • Parsley: a handful
  • Tomatoes: 1 medium-sized
  • Carrot: 1 small
  • Tomato puree: 2 tablespoon
  • Salt to taste
  • White pepper to taste
  • Carom seeds: if available; 1 teaspoon
  • Water to make the batter
  • A pinch of baking soda

Instruction:

  • In a food processor, roughly grind the raw broccoli, cauliflower, French beans, parsley, and carrot. Do not over grind it. The veggies should be forming a coarse mixture.
  • Now take the chickpea flour is a large mixing bowl. Add the salt, white pepper, and baking powder. Give it a good mix.
  • Now slowly add water to the dry mix. Whisk with a hand whisker or a fork until you get a semi-thick batter. Now add the tomato puree. Mix well.
  • Add chopped tomatoes and the veggie mixture. Mix well again. If the batter is too thick, add more water. This pancake turns out great even with a runny batter – so don’t worry!
  • Finally, add the carom seeds if available; taste and adjust seasoning accordingly.
  • Now heat a flat pan. Drizzle a few drops of olive oil or any cooking oil you have.
  • Pour a ladle full of the batter and cook one side on medium flame until the sides start to rise. Then flip the pancake and cook the other side on medium flame.
  • Remove from pan and serve hot with tomato ketchup.
