- Plain flour– 1/2 cup
- Gram flour– 1 cup
- Mint puree- ½ cup
- Coriander puree– 1 tablespoon
- Paprika powder– ½ teaspoon
- Carom seeds– 1 teaspoon (if available; adds a great flavor)
- Kosher salt– to taste
- Cumin powder– 1 tablespoon
- Turmeric powder– 2 teaspoon
- Organic sugar– 2 teaspoons
- Lime juice– 2 tablespoons
Instructions:
- In a large mixing bowl, mix the potato flour, gram flour, plain flour. Use a hand whisk to combine the flour so that they are combined evenly.
- Add in the turmeric powder and paprika powder and mix well. Add the coriander powder at this stage.
- Now add the mint, coriander puree and lime juice and mix well with the dry flour. Add the salt and sugar. The result should be a soft dough-like thing. Keep it for fifteen minutes so that the dry mix is well infused with the flavor of the mint and coriander.
- Add a little warm water if the dough is very dry and cannot form shapes. Alternatively, add some more potato flour if too wet.
- After fifteen minutes knead the dough with a little oil and add the carom seeds.
- Divide the dough into small portions and give the shape of tots.
- Heat a shallow pan with a drizzle of olive oil or any vegetable oil. Shallow fry the tots from both sides until they form a brownish outer crust.
- Serve hot with your favorite ketchup or vegan mayo.
You can also put these tots inside a wrap along with vegan mayo and enjoy a super delicious mint-tot wrap. You can also have it as it is with some ketchup or your favorite dipping sauce.
