Cheesy Roasted Veggie Quesadillas

Do you want to take the plain cheese quesadillas that you love so much to the next level? With roasted veggies and an array of salsas, you can make a more filling and veggie-packed meal for the whole family. Here is how you can make delicious roasted veggie quesadillas perfect for a weekend lunch.

Cheesy Roasted Veggie Quesadillas

(Serves 4)

Ingredients:

  • 6 tortillas (corn or flour)
  • 1 1/2 cups shredded vegan cheese of your choice
  • 1 small sweet potato, in small cubes
  • 1/2 red onion, sliced
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp crushed red pepper
  • 1/2 tsp cumin
  • 1/4 tsp black pepper
  • 1/4 tbsp vegan butter
  • Optional for serving:
    • Cilantro
    • Pico de gallo
    • Salsa verde
    • Lime wedges
    • Roasted corn salsa

Instructions:

  1. In a large bowl, combine all of the chopped veggies and then add olive oil, salt, crushed chili pepper, cumin, and black pepper. Mix so that all of the vegetables are evenly coated in olive oil and the seasoning.
  2. On a large baking sheet lined with aluminum foil, add on the coated and seasoned vegetables. Spread the veggies all over the pan so that they are not overlapping with each other.
  3. Bake in the oven at 350 Fahrenheit for 20 minutes or until the sweet potato is tender. Transfer contents to a bowl and set aside.
  4. Layout 3 pairs of 2 tortillas. You will be making 3 sets of quesadillas, by using a top and a bottom tortilla. Line each bottom tortilla with vegan cheese (use only half for the bottom layer).
  5. Add in a hearty, even layer of the roasted veggies on top of the cheese. Optionally add a squeeze of lime, salsa, and cilantro.
  6. Top the roasted veggies with the rest of your vegan cheese followed by your top tortilla.
  7. Transfer quesadillas one at a time to a vegan buttered pan and cook for a couple of minutes on each side until the tortillas are crispy and the cheese is melted.
  8. Use a pizza slicer to cut into triangles and serve with your favorite salsa, lime, and even more cilantro! Pair this recipe with vegan elote or watermelon agua fresca.
