Delicious Adult Loaded Grilled Vegan Cheese
Grilled vegan cheese is one of my favorite comfort foods that are quick, easy, but also pretty unhealthy. Sometimes, a sandwich of melted goodness is what you need in your life but other times, you may need just a little bit more. With the addition of some of your favorite veggies, you can turn your 5-year old’s favorite lunch into your new favorite late-night comfort food.
The vegetables I like in my grilled cheese are just a suggestion using my go-to’s! You can alternatively also add in avocado, artichoke, eggplant, squash, zucchini, or cucumber. You can also get creative with sauces- sometimes I make a yummy sriracha mayo to go on the inside of the sandwich. The possibilities are endless! Here is how you can make loaded grilled vegan cheese perfect for adults.

Loaded Grilled Vegan Cheese
Ingredients:
- Vegan-friendly bread (Sourdough is my personal favorite for this type of grilled cheese)
- Sliced Roma tomato
- Sliced red onion
- Sliced portobello mushroom, sautéed (I use non-dairy plant-based butter and garlic to sauté)
- Sliced black olives
- Baby spinach
- Sliced non-dairy plant-based mozzarella (I find that Violife gives a beautiful Melt)
- Plant-based mayonnaise
- Plant-based butter
- Optional:
- Plant-based Dijon mustard

Instructions:
- In a greased pan (a teaspoon of vegan butter will do the trick) toast one side of the bread until it achieves your desired Remove from pan.
- On the side of the bread that you toasted, add on a generous amount of vegan mayonnaise vegan Dijon mustard if so you wish, and add a hearty layer of vegan cheese on both slices of bread.
- Stuff your sandwich with all your favorites tomatoes, red onion, portobello, black olives, and spinach. Close the sandwich and coat each side of the un-toasted side bread with vegan mayonnaise to achieve a perfectly crispy loaded grilled cheese.
- Cook in the pan until you have a perfectly crispy sandwich with melted cheese. Once ready, slice in half to serve. Enjoy the loaded grilled cheese hot with a bowl of delicious and creamy vegan tomato soup and a glass of wine for a filling meal!
