Simple BBQ Vegan Chicken Wraps for Kids- Perfect for School Lunch!

It’s almost the end of the school year, and you might be running a little low on creative lunch ideas for your vegan kids to take to school. Featuring one of my personal favorite Gardein products, their super versatile vegan chicken strips, making a simple yet flavor-packed wrap is sure to be one of your go-tos for the rest of the school year. You can even swap out the chicken for jackfruit or swap our the tortillas to make lettuce wraps depending on your kid’s favorite way to eat lunch. Here is how you can make delicious vegan BBQ “chicken” wraps for your kid’s lunch in just 10 minutes.

Simple BBQ Vegan Chicken Wraps for Kids- Perfect for School Lunch!

Ingredients:

  • 1/3 package Gardein Meatless Chick’n Strips (or an equivalent “chicken” substitute)
  • 2-3 tbsp vegan BBQ Sauce
  • Vegan tortilla wrap of your choice (For a GF tortilla-like option you can use Siete Cassava & Coconut Flour Tortillas. If you want to sneak some extra greens into your kid’s lunch, try using Green Leaf Foods Raw Spinach Wraps)
  • 1/2 cup chopped kale
  • 1/4 cup shredded vegan cheese of your choice
  • 1/4 tbsp vegan mayonnaise
  • Optional:
    • Chopped green onion
    • vegan coleslaw

Instructions:

  1. Cook and prepare the Gardein chick’n as per the package’s instructions. Once cooked, transfer to a bowl and carefully, using two forks, shred the chick’n.
  2. Add in the vegan-friendly BBQ sauce to the shredded chick’n, adjusting the amount to fit your child’s liking.
  3. Add in the shredded vegan cheese to the chick’n mixture and mix well. Set aside.
  4. Use a vegan tortilla of your choice (you may need to use 2 depending on the size of them) and begin by spreading a small amount of vegan mayonnaise across the inside before adding a layer of chopped kale.
  5. Fill the tortillas with the shredded vegan BBQ chick’n and optionally top with a healing of homemade vegan coleslaw and sliced green onion.
  6. Wrap the tortilla and lightly crisp it in the pan for a minute. Finally, cut in half for easy eating. Serve in a bento box with a colorful fruit salad and a vegan-friendly granola bar for a filing meal to keep your child fueled all day at school.
