Crepes With Banana and Peanut Butter: Perfect Power Packed Vegan Breakfast

Crepes are those soft, goodness-packed food that can instantly lift spirits high. If you’re short on time and don’t want to settle for some mediocre vegan breakfast, this recipe is for you. You can prepare crepes in no time. Kids and adults love it alike. My version of this crepe has been altered to suit my vegan diet.  It tastes absolutely yummy. I have added some twists. Hope you will like it.

Ingredients

  • Almond milk: 200ml or some more
  • Flour: 2 cups
  • Organic sugar: ½ cup
  • Kosher salt: a pinch
  • Baking soda: 2 pinches
  • Peanut butter: as much as needed
  • Ripe bananas– 1 for each crepe
  • Vegan chocolate sauce to top the dressing
  • Icing Sugar for drizzling

Instructions

  • Mix flour, baking soda, salt, and sugar well.
  • Add the almond milk little by little so that no lump is formed. Whisk until a smooth, creamy and fluffy batter is formed.
  • Rest the batter for 10 minutes to let the ingredients settle. This forms better crepes.
  • Now heat a flat pan. Drizzle drops of oil and wipes with a soft cloth.
  • Add a ladle full of batter at a time. Now spread the batter evenly on the pan such that it covers the entire pan. Crepes are thin. Do not over pour the batter in the pan.
  • Cook the crepes in low heat for 10 minutes or until opaque from both sides. Remove and keep in a casserole until all the crepes are prepared.
  • Continue until all the batter is transformed into crepes.

Assembling the final recipe

  • Spread a crepe. Add a generous amount of peanut butter on top. Add the sliced banana in the middle. Roll it up or simply make a semi-circle.
  • Drizzle vegan chocolate sauce on top and finish with a generous drizzle of icing sugar using a sift. Enjoy while the crepes are still warm.

You can also add other solid fruits like strawberry. Just ensure the preference and ideally use fleshy and soft fruits.
