Loaded Vegan Mashed Potato Pancakes

Mashed potatoes are a great side dish, but sometimes it’s hard to judge how much to make and you end up with some leftovers. Before this Vegan Mashed Potato Pancakes recipe, I used to simply add a little nut milk and heat them up for a mid day snack. Now with these potato hotcakes you can vamp up leftovers in no time. This recipe is also great with freshly made potatoes so you don’t have to make a ton to enjoy these savory cake. Whether you make them fresh or a day out they will be perfect for your kids breakfast, lunch, or dinner.

Loaded Vegan Mashed Potato Pancakes

Ingredients:

  • 3 large russet potatoes or 2 cups leftover mashed potatoes (skip steps 1-4 )
  • 2 tbsp. vegan butter
  • 2 tbsp. green onion
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ cup shredded vegan cheese
  • ¼ cup flour plus extra for dredging
  • 1-2 tbsp. extra virgin olive oil

Directions:

  1. Peel and cut potatoes into cubes. Place potatoes in a large pot and cover with cold water about an inch above.
  2. Bring to a boil. Reduce heat down to medium-low and allow to simmer for about 15 minutes or until tender when poked with a fork.
  3. Drain potatoes and add back to the pot. Add butter,garlic powder,salt, and mash potatoes with a potato masher until smooth.
  4. Place potatoes in the refrigerator and allow potatoes to cool completely.
  5. Once cooled; fold in green onion, 1/4 cup flour, and cheese into the potatoes.
  6. Scoop ½ cup of mashed potato mixer into hands and mold into a patty.Dredge patty into a bowl of flour on both sides.Continue until all mixture is used. (Should make about 6 medium patties)
  7. Pour oil into a frying pan, heat over medium high heat. Once the pan is hot; cook patties on both sides until brown and crispy; about 3 minutes on each side. Top with vegan sour cream and coconut bacon.
