These scrumptious “cookies” are bursting with nutrients, so you’ll feel great about seeing your kids eat them! Keep them on hand in the fridge—they’re perfect for lunches, travel, or an after school snack. Oh, and be sure to save some for yourself!
What You’ll Need:
½ cup EACH: raw almonds and raisins
¼ cup raw cashews
3 tablespoons raw cacao powder
1 tablespoon raw agave nectar
2 teaspoons vanilla
1 teaspoon mint extract
⅛ teaspoon sea salt
The Method:
Blend all of the ingredients in a food processor until the mixture is in fine crumbs and very sticky. Remove one-tablespoon bits of the mixture and roll into balls (or form into cookie shapes if you prefer). These will store, refrigerated in an airtight container, for several weeks.
