Chocolate Mint Energy Cookie Recipe
These scrumptious “cookies” are bursting with nutrients, so you’ll feel great about seeing your kids eat them! Keep them on hand in the fridge — they’re perfect for lunches, travel, or an after-school snack. Oh, and be sure to save some for yourself!
What You’ll Need:
- ½ cup EACH: raw almonds and raisins
- ¼ cup raw cashews
- 3 tablespoons raw cacao powder
- 1 tablespoon raw agave nectar
- 2 teaspoons vanilla
- 1 teaspoon mint extract
- ⅛ teaspoon sea salt
The Method:
Blend all of the ingredients in a food processor until the mixture is in fine crumbs and very sticky. Remove one-tablespoon bits of the mixture and roll into balls (or form into cookie shapes if you prefer). These will store, and refrigerated in an airtight container, for several weeks.
