Mouthwatering Vegan Banana Chocolate Chip Waffles
One of my favorite things to do on weekend mornings is sleep in. Okay, I never actually get to do that, so my second favorite thing to do is to get up early and whip together a yummy breakfast of chocolate chip waffles for my family. I love hearing the kids running down the stairs saying ‘ it smells so good in here, what are you making?’ I recently bought a waffle iron and I’ve been having so much fun trying out different vegan waffle recipes. Chocolate Chip Waffles Recipe
Ingredients
3 ripe bananas
2 cups all-purpose flour
1 Tbsp ground flaxseed
2 tsp baking powder
1 Tbsp vanilla
1 cup vegan chocolate chips
1 Tbsp coconut oil
1 cup almond milk
pinch of salt
Instructions
Preheat waffle iron, eek! soon, you’ll have amazing chocolate chip waffles
In a large bowl, combine flour, flaxseed, baking powder, sugar, salt.
In a small bowl, whisk together oil, almond milk, banana.
Combine the two sets of ingredients and stir in chocolate chips. Don’t over-stir, it’s ok if the mixture is a little lumpy.
Pour ¼ cup of batter onto waffle iron and cook until golden brown.
