Mushroom Ragu Recipe

Now, when I was chatting with my husband recently the one thing he said he would have missed most (consuming a vegan diet) was the delicious flavors of a good bolognese.

So, when I created this recipe of minced mushrooms and all the other yummy ingredients that make a beautiful bolognese it was safe to say we were ‘stoked’.

Try this – you won’t be disappointed.

You Need

  • 4 chopped tomatoes (large)
  • 1/2 carrot
  • 1/2 zucchini
  • 150g mushrooms
  • Half-diced red or green capsicum
  • A handful of chopped spinach, silverbeet, or kale
  • 2 cloves garlic – crushed
  • 1/2 red/brown onion dice
  • 1.5 tbsp tomato paste
  • 1/2 cup water

Italian herbs, oregano, basil, thyme, rosemary or just some fresh basil (chopped)
Salt and pepper to taste

Method

Process mushrooms, carrots, and zucchini in the food processor.
Dice and sauté garlic and onion. Add diced capsicum, and pour in the mushroom mixture. Add herbs, tomatoes, and tomato paste.

Stir through the water to achieve the desired consistency. Add greens towards the end and stir through, serve when wilted.

Salt and pepper to taste and serve with pasta, zucchini noodles, rice, or quinoa.

I also love to top it off with a good old serving of nutritional yeast or ‘nooch’.
