Roasted Brussel Sprouts and Potatoes with Soyrizo

If you are looking for a super simple side dish or even a weekend breakfast idea you have come to the right place. With minimal ingredients and not too much prep, Roasted Brussel Sprouts could easily become a weekly meal. The rundown on this dish is pretty straightforward; it is spicy, filling, and will keep you coming back for more. This was the first recipe I had ever made with soyrizo and I was not disappointed, the whole dish marries perfectly together. The potatoes are nice and crispy, the sprouts are moist and tender, and the soyrizo adds a nice little kick to an otherwise standard dish. Another great use for this dish is to dice the potatoes, shred the brussel sprouts, and throw it all in a warm tortilla for a taco night. Regardless, if this is a side dish or the star of your meal, don’t get your hopes up for leftovers.

Roasted Brussel Sprouts and Potatoes with Soyrizo

Ingredients:

  • 1 lb red potatoes, rinsed and cut in to quarters
  • 1 lb brussel sprouts, washed, destemed, and halved
  • 14 oz soyrizo
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 400 degrees and grease a baking sheet with spray oil.
  2. Toss potatoes and brussel sprouts in oil and then sprinkle with salt and pepper.
  3. Place on a lined baking sheet making sure to spread vegetables out for even cooking.
  4. Bake on the middle rack for 35 – 40 minutes rotating and shaking halfway through until the vegetables are golden brown.
  5. 10 minutes before the vegetables are done baking, cook soyrizo.
  6. Remove soyrizo from casing . Grease a frying pan and crumble soyrizo into pan.
  7. Cook on medium heat for about 5-8 minutes until warmed through and started .
  8. Toss chorizo with roasted vegetables and serve hot.
  9. Top with sour cream and chopped green onion.
