The New Superfood Umeboshi Paste Can Transform Food

Although being hailed as a new superfood, this ancient paste is made from fermented Japanese plums and is suitable for a wide variety of dishes. It has a consistency of plum jam, with a taste so unique, that one must try it.

Expecting it to be sweet because of the fruit wouldn’t be a wild guess, yet, the taste is often described as salty, and even tangy.

To prepare, the unripe ume is fermented in a salt bowl for a number of weeks with red perilla leaves, giving it that rich reddish color. It is perfect for dishes that want a creamy cheese consistency, such as pasta dishes or mac and cheese.


In addition to its delicious flavor, this new superfood claims to have multiple health benefits, namely, a cure for hangovers, with being rich in iron and calcium.

Studies on the benefits of consuming umeboshi have concluded that the plums may prevent gastrointestinal inflammation, and cancer, offer heart protection, and protect against oral pathogens.
