Snow Day Vegan Hot Cocoa and Cookies

Tomorrow will be the first snow of winter where I live in France, both an exciting and daunting experience. Luckily enough, I don’t work tomorrow which means that I will have the opportunity to stay at home with some Netflix before I’ll have to brave the freezing weather the following day. Vegan hot cocoa and cookies are an absolute must for me in the winter and an absolute requirement when there’s actual snow. Here are my go-to cocoa and cookie recipes to get you through the winter.

Vegan Cookies

Vegan Cookies:

  • 2 overly ripe bananas
  • 1 ½ cups almond flour
  • ⅓ cup almond milk
  • 1 tbsp raw sugar
  • ¼ cup vegan dark chocolate chips
  • ½ vegan dark chocolate baking bar
  • ⅓ cup dried cranberries
  • ¼ cup thinly sliced almonds
  • cinnamon

Roughly mash the bananas in a bowl then add in the almond milk, almond flour, and sugar. Next with a good knife, chop half of a vegan chocolate baking bar into thick chunks and add in the chopped chocolate to your batter along with the chocolate chips, dried cranberries, and almonds, mixing thoroughly. Place on a baking sheet lined with parchment paper and sprinkle a dash of cinnamon over the cookies before baking at 350 degrees Fahrenheit for 12 minutes. (or until the edges begin browning) Make your hot chocolate as these cool on a baking rack. I know it’s hard to wait, but the roof of your mouth will thank you!

Vegan Hot Cocoa:

  • 1 tbsp cocoa powder
  • 1 cup of almond milk
  • ½ tbsp raw sugar
  • 1 square of dark chocolate
  • optional: almond milk Bailey’s
  • optional: vegan whipped cream
  • optional: vegan mini marshmallows

Begin by bringing the almond milk to a simmer in a pot. Add in the sugar and stir well. Next, add in the cocoa powder and stir until it is fully dissolved. (no clumps) This is the part where we take the recipe to the next level for the ultimate fudgy hot chocolate experience. Melt the square of dark chocolate into your mixture until it has been dissolved. You may add in the Bailey’s at this time, adjusting the amount to your liking. Serve in a large mug and top with a generous amount of vegan whipped cream and/or vegan mini marshmallows. Mmmm, vegan hot cocoa.
