Snow Day Vegan Hot Cocoa and Cookies
Tomorrow will be the first snow of winter

Vegan Cookies
Vegan Cookies:
- 2 overly ripe bananas
- 1 ½ cups almond flour
- ⅓ cup almond milk
- 1 tbsp raw sugar
- ¼ cup vegan dark chocolate chips
- ½ vegan dark chocolate baking bar
- ⅓ cup dried cranberries
- ¼ cup thinly sliced almonds
- cinnamon
Roughly mash the bananas in a bowl then add in the almond milk, almond flour, and sugar.

Vegan Hot Cocoa:
- 1 tbsp cocoa powder
- 1 cup of almond milk
- ½ tbsp raw sugar
- 1 square of dark chocolate
- optional: almond milk Bailey’s
- optional: vegan whipped cream
- optional: vegan mini marshmallows
Begin by bringing the almond milk to a simmer in a pot. Add in the sugar and stir well. Next, add in the cocoa powder and stir until it is fully dissolved. (no clumps) This is the part where we take the recipe to the next level for the ultimate fudgy hot chocolate experience. Melt the square of dark chocolate into your mixture until it has been dissolved. You may add in the Bailey’s at this time, adjusting the amount to your liking. Serve in a large mug and top with a generous amount of vegan whipped cream and/or vegan mini marshmallows. Mmmm, vegan hot cocoa.
