Vegan Peanut Butter Cups: Valentine’s Day 2019

Vegan Peanut Butter Cups: Valentine’s Day 2019

Ingredients

FOR THE CHOCOLATE LAYER

  • 10 oz bag of semi-sweet vegan chocolate chips
  • 2 tablespoons virgin coconut oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract

FOR THE PEANUT BUTTER FILLING

  • 3/4 cup all-natural peanut butter, chilled in the fridge
  • 1/4 cup pure maple syrup
  • 1/4 teaspoon sea salt
  • 1 tablespoon organic brown sugar

Directions

  1. Start by lining a 12-cup muffin tin with paper muffin liners
  2. Over low heat, add two tablespoons of coconut oil to a saucepan and heat until melted.
  3. Add the bag of chocolate chips, and stir continuously over low heat until melted.
  4. When the chocolate is melted, add in the sea salt and vanilla extract.
  5. Once the chocolate mixture is stirred and melted, pour 1 tablespoon of chocolate mixture into the bottom of each muffin liner.
  6. Put the muffin tin into the freezer for 15 minutes.
  7. While chocolate is hardening, make the peanut butter mixture.
  8. Add the chilled peanut butter to a bowl.
  9. Add maple syrup, sea salt, and organic brown sugar and stir with a fork until combined.
  10. Take your muffin tin out of the freezer and put 1 tablespoon of peanut butter mixture on top of each layer of chocolate.
  11. Drizzle a teaspoon of chocolate mixture over the tops of each muffin cup.
  12. Freeze for 15 minutes.
  13. Store your vegan peanut butter cups in the freezer or fridge.
