Freshen Your Senses

Fruit salads are a great way to refresh your system in the summer. A bowl of fresh fruit salad is filling and is packed with the goodness of whole fruits. Just make sure that the fruit you chose is organic and fresh. I also add cashews and raisins in the salad for extra crunch and flavor. This recipe has a delicate coconut whipped cream as a topping.


  • Bananas: 1 whole; thickly sliced
  • Strawberries: 5-6; sliced along the length
  • Valencia orange: 1 whole; peeled and chopped in chunks
  • Green grapes:  a few whole
  • Pomegranate: ½ cup
  • Kiwi: 1 whole; cut in cubes
  • Dragon fruit: ½ cup (optional); chopped
  • Blueberries- ½ cup
  • Cashews: a few; optional
  • Raisins: a few; optional
  • Maple syrup: 1 tablespoon for garnish

For Coconut Whipped Cream:

  • High-quality, full-fat coconut cream- overnight refrigerated
  • Organic powdered sugar/ sugar dust- to sweeten if needed


In a large salad bowl, put in all the evenly chopped and sliced fruits like orange, grapes, kiwi, banana, pomegranate, strawberry, cashews and raisins. Give a light toss. Add some maple syrup on top. Give another light mix and keep the summer fruit salad aside.

Now, to make the coconut whipped cream, pour the chilled good quality, full-fat coconut cream in a large bowl. Avoid using the watery remains of the thick cream. Beat the thick part with an electric beater, slowly in the beginning, gradually increasing the speed. In between add the powdered sugar to your desired quantity to sweeten. Beat until fluffy.

P.S: In case your brand of the cream is too thick for whipped cream consistency, you might add a little bit of coconut milk to soften. Make sure to add gradually.

Done. Now in a mason jar, assemble the fruits in layers. Sprinkle the nuts and raisins. Once topped, add a large dollop of your vegan whipped cream. Enjoy.
