Here is the recipe for some easy vegan breakfast: delicious banana blueberry overnight quinoa.

We all know breakfast is a hectic meal to get through during those crazy weekday mornings. Whether you have kids rushing out of the door to get to school or heading to work in a hurry because you slept through your alarm, an easy breakfast can help. Overnight oats have been a great on the go meal and continue to be a great morning go-to. My husband loves overnight oats, but for me, I prefer quinoa given that it’s lower calorie and lower fat per gram. Using quinoa also provides a unique nutty flavor which enhances the dish as a whole. This recipe is simple and a super quick meal to prepare since it’s basically “blend, pour, and let it sit.” The banana blueberry combination is a classic one and adding in the dates allows you to get the sweetness without the processed sugar. With that being said, I am almost certain you will be more than willing to make this for your kids without hesitation since it’s packed with only healthy whole food ingredients.

Banana Blueberry Overnight Quinoa

Ingredients:

  • 1 cup cooked quinoa
  • 50 g fresh blueberries
  • 1 medium banana
  • 1 cup plant milk
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 2 small dates, pitted

Directions:

  1. In a blender, add plant milk, banana, dates, cinnamon, and vanilla.
  2. Blend on high until all ingredients are well blended, about a minute.
  3. In a mason jar or a container with an airtight lid, add quinoa. Pour milk mixture over quinoa and stir until well combined. Add in blueberries, close lid, and give it a good shake. Place in the fridge overnight.
  4. Open in the morning and top with some of your favorites.

    The recipe calls for cooked quinoa, but it also says to soak them overnight. Wouldn’t it be better to use raw quinoa instead?🤔
