INGREDIENTS
The Vegan Chili Crock pot Recipe needs following ingredients:
- 2 Tbsp Extra Virgin Olive Oil
- 1 medium Onion (diced)
- 2 Carrots (diced)
- 1 Celery stalk (finely chopped)
- 3 Garlic cloves (minced)
- 1 15oz can Black Beans (do not drain)
- 1 15oz can Garbanzo Beans (do not drain)
- 1 15oz can Kidney Beans (do not drain)
- 2 cups Vegetable Stock
- 1 15oz can fire-roasted Diced Tomatoes (do not drain)
- 3 oz Tomato Paste
- 1 cup Frozen Corn
- 3 Tbsp Chili Powder
- Salt and Pepper to taste
- 1 Bay Leaf
Vegan Chili Crock pot Recipe
DIRECTIONS
Place skillet on medium-high flame and add olive oil.
Sauté fresh veggies and garlic until tender.
Transfer veggies over to a medium to large crock pot.
Add remaining ingredients, stir to combine, cover with lid, and set crock pot on HIGH 2 hours or LOW 4-8 hours.
Serve with a dollop of cashew cream and some yummy cornbread.
