St. Patrick’s Day is fast approaching, so it’s time to break out the traditional recipes from the Old Country. Colcannon is a traditional Irish dish made from….. You guessed it, potatoes and cabbage. Colcannon is a staple found in many homes across Ireland at any time of the year. It is the ultimate Irish comfort food.

Vegan Irish Colcannon for St Patrick’s Day

Ingredients

  • 5 large potatoes, peeled and cut into fourths
  • 1 head cabbage, chopped
  • 3 leeks, sliced
  • 1 cup of soy milk
  • Salt to taste
  • Black pepper to taste

Instructions

Put your quartered potatoes into a large pot and cover them completely with cold water. Bring it to a boil and cook for at least 20 minutes, or until potatoes are tender.

In another pot, boil the cabbage in water for 15 minutes. Drain and set the cabbage aside.

In a skillet, cook the sliced leeks in soy milk until tender, about 15 minutes.

When the potatoes are cooked, mash them together with the leeks, soy milk, salt, and pepper.

Add the cabbage and stir to combine.
