Arepa with Fresh Vegan Salad: A Sumptuous and Healthy Meal
Arepas are a traditional South American food prepared with ground cereal crops like corn and maize. They are fun to make and are very healthy. It can be combined with a number of plant-based ingredients. You can have arepas for breakfast, lunch or dinner. It is very easy to make if you have the right ingredients. This particular recipe is a type of Venezuelan style arepa with fresh avocado vegan salad. Get cooking!

Arepa with Fresh Vegan Salad: A Sumptuous and Healthy Meal
Ingredients:
For arepa–
- Cornmeal: 2 cups
- Salt to taste
- Olive oil: 1 tablespoon
For Avocado salad
- Ripe avocado: 1 whole
- Cherry tomatoes: 3-4
- Lime juice: 1 tablespoon
- Pomegranate for sweetness
- Castor sugar: 2 pinches
- Kosher salt to taste
- Black pepper: 1 teaspoon (freshly crushed)
- Fresh cilantro: 1 tablespoon (finely chopped)
Instructions:
To make the arepa:
- In a mixing bowl add the cornmeal, salt and olive oil.
- Add 2 cup of warm water in small portions until the dough forms. (Do not put all the water in at once. We want a stiff dough. Depending on the type and brand of cornmeal, you might need more or less than 2 cups warm water. So add in small quantities. Once the dough is properly combined, rest it for fifteen to thirty minutes. In the meantime, prepare the salad.)
- After the dough is rested, oil your hands with some cooking oil to prevent the dough from sticking. Divide the dough into small, equal portions. Flatten using the palms of your hand such that they form thick round discs about the size of your palms.
- Heat a flat pan. Dry roast the discs until done from both sides. Repeat with all the discs. Your arepas are ready.
To make the vegan salad:
De-seed the ripe avocado. Chop the flesh into big chunks. Marinade with salt and lime juice for awhile. Meanwhile, slice the cherry tomatoes. Now mix the tomatoes with the marinated avocado. Add some more salt and pepper. Add the castor sugar and fresh cilantro. Give a quick mix. Now time to assemble…take two roasted arepas. Place the fresh salad in the middle. Enjoy fresh.
