Mouthwatering Vegan Spinach and Mushroom Pie Recipe
Quiche is a big brunch favorite at my house. It’s a very versatile dish and can be served for pretty much any meal. Sometimes I’ll make two at a time and keep one in the refrigerator to serve for dinner during the week. This recipe for vegan spinach and mushroom pie is so delicious. The chickpea flour crust is very simple to make and I really like the flavor that turmeric brings to the dish.

Ingredients For Vegan Spinach and Mushroom Pie
Crust

2 cups chickpea flour
1/2 cup ice cold water
1 tablespoon olive oil
Pinch salt
Filling

1/4 cup chopped onion
1 tablespoon olive oil
1 clove garlic minced
2 cups chopped mushrooms
4 cups spinach
14 ounces firm tofu
½ teaspoon turmeric
2 tablespoons nutritional yeast
Salt and pepper
Instructions
Chickpea Flour Crust: Preheat oven to 325°.
Mix all the ingredients together. Oil a 9″ pan with olive oil.
Press the dough out in the pan. Bake at 325° for 20-25 minutes.
Filling:
Add olive oil to a pan and heat over a medium heatAdd onions and cook until translucent.
Add mushrooms, garlic, salt,
Add spinach.
In a food processor combine tofu, turmeric and nutritional yeast. Mix well. Add salt and pepper to taste.
In a bowl combine tofu mixture and spinach-mushroom mixture. Pour over chickpea flour crust. Bake at 400° for 20 minutes.
