Mouthwatering Vegan Spinach and Mushroom Pie Recipe

by | December 17, 2018

Quiche is a big brunch favorite at my house. It’s a very versatile dish and can be served for pretty much any meal. Sometimes I’ll make two at a time and keep one in the refrigerator to serve for dinner during the week. This recipe for vegan spinach and mushroom pie is so delicious. The chickpea flour crust is very simple to make and I really like the flavor that turmeric brings to the dish.

Filling was great. I think crust needs something different. Or maybe different flour option all together. I m thinking adding garlic and touch of lemon zest to the mix and let it sit for 30 min. Do you have other crust options?
