If you are trying to eat healthier and follow a whole food plant-based (WFPB) diet, bowls are a great way to make sure you get in a well-rounded meal filled with vitamins and minerals. To help you cut the chaos here’s an easy vegan burrito bowl recipe that’ll fill you up in no time.

This delicious burrito bowl can be topped with some of this WFPB sour cream for extra flavor.

Ingredients:

Burrito Bowl (1 serve)

Beans

  • 1/4 cup black or pinto beans (either pressure cooked or from a tin)
  • 1/4 tsp ground cumin
  • 1/4 tsp chili powder
  • Pinch of Celtic sea salt 

Rice

  • 1 clove garlic, minced
  • 1/6 cup finely chopped white onion
  • 1/4 cup basmati rice (cooked)
  • Pinch of Celtic sea salt
  • 1 Tbsp lime juice
  • 1/4 tsp ground cumin
  • 1/6 tsp chili powder
  • 1 Tbs fresh chopped cilantro

Roast Capsicum 

  • 1/3 medium red, or yellow capsicum (thinly sliced lengthwise)
  • 1 Tbs medium red onion (sliced into 1/4-inch rings)
  • Pinch of Celtic sea salt

Instructions: 

  1. Pre-cook your basmati rice.
  2. Add some veggie stock to a pan then put in the beans to a small saucepan over medium heat and season with cumin, chili and salt for about three to five minutes, then reduce heat to a simmer. 
  3. In a large pan which has been heated over medium heat add in some veggie stock then the garlic, onion, and salt.
  4. Sauté for 1 minute, stirring frequently. Then add cooked basmati rice and stir to coat in the herbs and spices. Allow cooking for 1 to 2 minutes. 
  5. Quickly chop up your capsicum and red onion at this time.
  6. Remove rice from heat and transfer to a large mixing bowl. Add lime juice, cumin, chili powder, salsa, and fresh cilantro. Stir to combine and taste. Add in extra seasonings if required.
  7. Heat the large pan back over medium-high heat. Once hot, add some water or veggie stock, capsicum and red onion and a pinch of sea salt. Sauté, stirring frequently, until slightly softened approximately 4 minutes.
  8. Serve by dividing the three parts in your bowl. You can add in some extra leafy greens if you like and top with avocado, fresh salsa, lime and/or cilantro. This sour cream goes well on top too!
