Vegan Detox Bowl with Arugula Pesto
Veganuary detox time is upon us. You don’t have to trade flavor for healthy. This vegan detox bowl is packed full of nutritious veggies, and the arugula pesto gives it a peppery pop. Delicious and nutritious.

Vegan Detox Bowl with Arugula Pesto
Ingredients
- 1 1/2 cups cooked rice, still warm
- 1/2 a large avocado, cubed
- 1 carrot, chopped and steamed
- 1 small bunch of broccolini , steamed till tender
- 1 teaspoon olive oil
- 1 cup shredded Brussels sprouts
- zest of 1/2 a lemon
- pinch of sea salt
- 6 tbsp. Arugula Pesto, find the recipe here
Directions
- Stir in 4 tablespoons of your arugula to the warm rice.
- Stir in 2 tablespoons of your arugula to the broccolini.
- In a bowl, add your rice first, then top with broccolini, carrots, and avocado.
- At the last minute, heat a pan with oil and cook Brussels sprouts with lemon zest and salt until slightly wilted.
Top your detox bowl with the Brussels sprouts and enjoy the goodness!
