March is the beginning of warmer weather and more produce. As we slowly began to jump into Spring, we’ll be seeing more and more colorful food on our plate but for now, we still have a good list. Here are some of the best fruits and vegetables in season during March and how to serve them.

Artichokes

Artichokes are as full of protein, fiber, and antioxidants as they are delicious! If you want to benefit from the influx of artichokes at your local market, try making an artichoke pizza with vegan mozzarella, sun dried tomatoes, and a vegan white garlic sauce.

Asparagus

This long, green vegetable is loaded with many vitamins including Vitamins A, C ,E ,K, and B6. Asparagus can also help in lowering blood pressure and aiding overall digestion. Try cooking lemon roasted asparagus to accompany a vegan-protein during your next family dinner.

Beets

Fueling your body with fiber, folate and Vitamin C, beets can be easily added to both savory and sweeter meals. Try cooking a simple serving of roasted beets as a nutrient-packed side dish to your all of your favorite meals.

Brussel Sprouts

Low in fat and calories but high in Vitamin A, brussel sprouts can be a delicious addition to your suppers. Going great with homemade mashed potatoes, garlic roasted brussel sprouts will be the newest addition to your dinner time menu that even your kids will love.

Grapefruit

Proven to help with weight loss and a powerhouse of antioxidants, grapefruit is a great way to start and end your day. Either have half a grapefruit for breakfast with your avocado toast or alternatively try making a broiled grapefruit for a healthy dessert.

Lemons

As a great natural weight-loss supplement and a great Vitamin C source, fresh lemon juice has always been a must in my fridge. Reward yourself with a sweet vodka mint lemonade made with homemade lemonade (it’s even better if you grew your lemons yourself!) from all the hard mom-ing you’ve been doing.

Strawberries

Not only are they a wonderful source of of-of fiber and Vitamin C, but strawberries can also help regulate blood sugar as well as treat arthritis symptoms. On your next sunny day, try a simple strawberry topped chia seed pudding for an antioxidant-filled afternoon snack.
