Vegetable tofu stirfry is a power-packed vegan snack great for laid back evenings. This recipe is a simple stir fry with some very subtle flavors and a healthy dose of nutrition made even better with a delicious vegan sauce. It is a filling side dish ideal for a packed lunch or even for dinner. You just need some very simple ingredients and very less time. Don’t wait. Try for yourself.

A tip: Partially thawed veggies if immediately transferred into ice-cold water from the steamer or boiler, helps preserve the color from fading and maintains the crunch. The content should be taken out after one minute. Putting in ice-cold water stops the cooking process.

Ingredients:

  • Broccoli: 1 cup; cut in small florets
  • Cauliflower: 1 cup; in small florets
  • Carrots: ½ cup; cut in long thick strips
  • Bell peppers– ½ cup; cut in square cubes
  • Tofu– 100 grams; cubed
  • Ginger: 1 tablespoon; chopped finely
  • Light Soy sauce: a tablespoon
  • Green chili sauce: 2 teaspoons
  • Sesame oil: 1 teaspoon
  • Salt to taste
  • Black pepper to taste
  • Olive oil: around 1 ½ tablespoon

For Sauce:

  • Vegan Broth/ veg stock- 1/2 cup
  • Corn flour/ starch- 1 tablespoon
  • Agave nectar– 1 tablespoon
  • Soy sauce– 2 tablespoon
  • Vinegar– 1 teaspoon (synthetic or rice)
  • Ginger– 1 inch; finely grated
  • Salt– to taste
  • Sesame seeds– half-teaspoon to garnish

Instructions:

  • Partially steam the cauliflower, broccoli, and carrot in a steamer for 5 minutes or until it is half-cooked with the crunch intact.
  • Now heat half of the olive oil in a wok or fry pan.
  • Fry the tofu with some salt until the outer layer of the tofu turns crisp. Remove from the pan and keep aside.
  • Heat the remaining oil and add the chopped ginger. Fry some time and add some soya sauce. Stir fry for a while. Add the bell peppers and keep stirring in high-flame.
  • Now add the steamed broccoli, cauliflower, and carrots. Stir fry and add some salt and pepper. Stir fry and finally add the done tofu.
  • Keep stirring and add the rest of the soya sauce.
  • Now it’s time to add the sauce- in a bowl add the vegan broth, agave nectar, soy sauce, vinegar, cornflour, ginger and salt, and whisk well before adding the mix onto the pan where the veggies and tofu are cooking. Flames should be high before adding.
  • Once the sauce is added, continue to stir until the cornflour thickens and the sauce is dried a bit.
  • Before turning off the flame add the sesame oil and give a final toss. Serve hot with rice bread or pack it for lunch.

The veggies must be stir-fried in high flame, even after adding the sauce. This means you’ve got to continue to stir to avoid burning. Add the soy sauce in parts to bring out the subtle flavor.
