I am talking about an all-time favorite snack, more popularly known as ‘chaat’ in the Northern parts of India. From streets to most posh eateries, you’ll find it everywhere…and it is VEGAN! All you need for this quick hunger fix is a mint-cilantro dip (chutney), some chopped veggies, puffed rice, chickpea noodles (sev) and voila! The sevs, or more popularly known as bhujia, are easily available at any Indian grocery store. And if you will like to know how to prepare it at home, stay tuned to this section. Mint-cilantro dip is easy to prepare and you can refrigerate it for at least a week. It pairs well with other dishes like tofu fritters, vegetable rice, and potato patties.

For the mint-cilantro dip, you need to blend a cup of mint leaves with 2 cups of cilantro leaves, a medium sized tomato, half a cup slit green chilies, a small onion, a pinch of black salt, and a teaspoon of lemon juice. After this dressing is ready, get started to make the savoriest vegan snack- Bhelpuri.
Ingredients:
- 2 cups of puffed rice
- 2 small boiled potatoes mashed well
- One medium sized onion
- One medium sized tomato
- Roughly chopped mint and cilantro leaves
- Half a cup Chickpea noodles (sev)
- One-fourth cup of roasted peanuts (optional)
- A tablespoon of mint-cilantro dip
- A teaspoon of lemon juice
- A tablespoon of tomato ketchup
- Salt as per taste
- Black salt- a pinch
Chop all the ingredients finely and keep aside.

Instructions:
Take a big bowl and add onion, tomato, puffed rice, mashed potatoes, chickpea noodles, peanuts, tomato ketchup, salt, and black salt. Mix well. Drizzle lemon juice and mint-cilantro dip over it. Toss really well so that each ingredient gets coated with the dressing. Garnish with roughly chopped cilantro and mint leaves. Serve.
Note: Bhelpuri is a vegan snack that should be consumed immediately as the dressing makes it go soggy after a while. The fresher it is, the crunchier it will be.
