Delicious BlueBerry Vegan Smoothie To Wake Up To Each Morning
Before getting to the technical part, let me warn you: this smoothie is addictive! It tastes so well that you’ll notice your blueberry intake going up within a few weeks. I have become a blueberry fan ever since and can’t stop tying it into other desserts I make, such as raw vegan blueberry cake. These smoothie bowls also make up for an awesome Instagram-worthy post.
I suggest generous use of Pumpkin seeds in this recipe for the nutrition profile it boasts in the form of iron and magnesium contents. Saffron is an antioxidant used for medicinal purposes in various Asian cultures. Soak the strands a night before in water or almond milk.

Instructions:
- Frozen blueberries: 1 cup
- Banana: 1 medium sized
- Almond milk: 2 cups
- Maple syrup (optional): as per taste
- Raw unsalted pumpkin seeds: 2 tablespoon
- Saffron strands soaked in water or almond milk: 5-6
- Pistachios (shredded): 1 teaspoon
Instructions:
In a blender, blend banana, blueberries, saffron strands and almond milk together. Transfer to a bowl or glass. Add maple syrup if you’ll like it to be extra sweet. Although, I prefer the natural sweetness the blueberries and banana impart to the smoothie. Garnish with pumpkin seeds and pistachios. Serve immediately or chill for use later.
