This pasta recipe will tick both the boxes- in taste as well as ease of cooking. Using just one pot, you can create this delicious and healthy pasta dish sure to become a family favorite.

Ingredients:

  • 100g whole wheat spaghetti
  • 1/4 small zucchini, cut into small cubes
  • 1/4 small eggplant, cut into small cubes
  • 1/4 yellow or red capsicum, cut into small strips
  • 20g red onion, chopped
  • 1 clove of garlic, minced
  • 1/4 cup cherry tomatoes, cut into halves
  • 1/4 cup broccoli, cut into florets
  • 1 cup vegetable stock
  • 1 tsp dried Italian herb mix
  • Pinch of salt
  • Pinch of black pepper

Instructions:

  1. Put all ingredients except for the broccoli florets into a large pot. 
  2. Pour in the vegetable broth.
  3. Season with dried Italian herbs, salt, and pepper.
  4. Add the broccoli after about 10 minutes cook time. 
  5. Cook for a further 3 – 5 minutes 
  6. Serve.
