Hearty and Healthy One-Pot Vegan Pasta Dish That You Can Make Tonight
This pasta recipe will tick both the boxes- in taste as well as ease of cooking. Using just one pot, you can create this delicious and healthy pasta dish sure to become a family favorite.
Ingredients:
- 100g whole wheat spaghetti
- 1/4 small zucchini, cut into small cubes
- 1/4 small eggplant, cut into small cubes
- 1/4 yellow or red capsicum, cut into small strips
- 20g red onion, chopped
- 1 clove of garlic, minced
- 1/4 cup cherry tomatoes, cut into halves
- 1/4 cup broccoli, cut into florets
- 1 cup vegetable stock
- 1 tsp dried Italian herb mix
- Pinch of salt
- Pinch of black pepper
Instructions:
- Put all ingredients except for the broccoli florets into a large pot.
- Pour in the vegetable broth.
- Season with dried Italian herbs, salt, and pepper.
- Add the broccoli after about 10 minutes cook time.
- Cook for a further 3 – 5 minutes
- Serve.
