Healthy Roots Cafe is a small eatery located in a commercial kitchen next to the cafeteria of the V.H. Lassen Elementary School in Phoenix, Arizona, US. Healthy Roots Cafe is Arizona’s newest vegan eatery with all of the ingredients locally sourced and all food served being vegan. But that’s not the only reason why the restaurant deserves attention. The cafe is run by children, where 9 years old Auralia is the youngest hostess and 16-year-old Julian Martinez is eldest, according to report. The restaurant is open only one day a week on Saturdays from 8-11 a.m, according to media outlet AZCentral.

Speaking about the vegan restaurant, according to media reports a restaurant already existed in the elementary school, for 35 years. It was funded by the school district until two years ago when the budget was cut. The new plant-based concept was newly opened (grand opening happened on June 7) with a $50,000 grant extended by an education-based community garden in south Phoenix called The Orchard Learning Center.

The cafe now employs 20 children, including 9-years old Auralia. The students learn about the benefits of plant-based eating and locally grown food on oneself, health and the environment. Director of the orchard, John Wann-Ángeles feels that such a curriculum should exist in more schools, considering the lurking consequences of climate change we’re in.

“If the scientists are right, we’re in trouble — big trouble. And who’s going to fix it? It’s not going to be me; it’s going to be their generation.”

However, speaking about serving vegan food in the community, it reportedly faces some difficulties, since the concept is apparently “difficult to translate through certain cultures,” AZCentral reports.

Popular or Not

Popular or not, plant-based eating remains one of the single most influential movements in the run for protecting the environment, alongside helping people with health-related issues (when observed efficiently and responsibly). Children from ages 9-16 running a fully vegan cafe in a community that is unaccustomed to the idea, is commendable. We wish all the best to the children and that the restaurant may thrive.
