Try These Mexican-Inspired Loaded Spuds For Your Next Vegan Meal

Loaded spuds (aka baked potatoes) make an awesome, wholesome vegan meal. Try maxing out the potatoes with a nutritious filling of black beans, kidney beans, and vegetables. This Mexican-inspired, loaded spuds recipe could be your next favorite meal!

Loaded Baked Potato (1 serving)

Ingredients:

  • 1 x 200g baked potato (baked whole with or without skin) 

For the Bean mix:  

  • 1 cup black beans or red kidney beans 
  • 1 tsp sriracha
  • 1/4 tsp cayenne pepper 
  • 1/6 tsp cumin powder 

For the Topping: 

  • 1/2 a tomato, diced into small cubes 
  • 1/4 avocado, mashed 
  • 1 tbsp finely chopped red onion 
  • 1/2 tsp sriracha 
  • 1 tbsp fresh coriander, finely chopped
  • 1/4 lime squeezed over top 
  • 1 tsp sprinkle of nutritional yeast 

Instructions:

1. Preheat oven to 400 degrees F (200 degrees C)  

2. Cook the potato in the oven until it is soft all the way through, about 40 minutes. 

3. While your potato is baking, cook your beans. Add approximately 3 tbsp of water to the pan first to keep the beans from sticking to the pan, and add the spices. Add more spice to taste if desired. 

3. Chop and prepare the toppings. 

4. Once your potato is cooked, remove it from the oven, and put it on a plate. Cut the top so you can load in your bean mixture, then top with tomato, mashed avocado, onion, sriracha, lime, coriander, and nutritional yeast.
