Mushroom soup can be a great mood-lifter. Plus, they’re rich in fiber and other nutrients. This creamy recipe is a great vegan alternative to the dairy-based one. I started to fall for mushrooms because of their flavor and their capacity to add richness to every dish they are added into. Not to mention their versatility. This is a heavy and filling soup that can be enjoyed with croutons or crunchy toast. Often, onion and garlic are added to such recipes. But for this particular creamy mushroom soup, I prepare it without the pungent onion or garlic such that the natural flavors of the mushrooms are preserved. Instead, I’ve employed herb to enhance the flavor.


  • Mushrooms: 500gms; sliced
  • Tomato: 1/2 cup; chopped
  • Ginger: ½ tablespoon; chopped finely
  • Dill leaves: 2 teaspoon
  • Full fat coconut milk: 1 cup
  • Coconut cream: 1/2 cup
  • Vegan broth– 1/2 cup
  • Cashews: 8 to 10
  • Vegan butter: 1 tablespoon
  • Olive oil: ½ tablespoon
  • Salt and pepper to taste


  • Heat a sauce pan. Add the vegan butter and olive oil and let it heat up for a while. Now add cashews and fry them until they turn golden brown. Keep aside to be used later to prepare the vegan soup.
  • Now, add the chopped tomatoes and ginger and sauté for a while.
  • After the raw smell of the ginger and tomatoes are gone, add the sliced mushrooms and sauté until they release their natural juice. Cook for about 7 to 8 minutes.
  • Now remove some sliced mushrooms and keep aside for garnishing.
  • At this point add the coconut milk and coconut cream. Keep stirring.
  • Add the vegan broth to add slight thinness to the soup. Since you’ll be boiling, it will automatically thicken.
  • Add the dill leaves and salt and pepper.
  • Keep stirring until the mixture comes to a boil. Now turn down the flame and let the mixture cool down for a while.
  • In a food processor or blender add the cool mix of mushroom and coconut milk.
  • Add the fried cashew and blend until you get a smooth mixture.
  • Now transfer the mixture into the saucepan and warm it up again. You can add some more salt and pepper if you need. Add some more vegan butter on top for the extra flavor.
  • Serve in a soup bowl with the reserved sliced mushroom on top. Sprinkle some dill leaves and enjoy your bowl of warm and soulful mushroom soup.
  • Just toast some vegan-friendly soup bread with dairy-free butter, and dill and serve with this soup as sides.
