Occasionally, we all can take a break from a hardcore ‘healthy food,’ and maybe that is why can also indulge in recipes like this, along with children. Cornballs are one such snack-recipe that is fun to make, yummy to eat, and literally goes with every party out there. Your vegan kids are going to love this for sure.

Corn Balls: Perfect Light Snack For Vegan Kids

Sweet corn is high in fiber and is a great tummy filler. It is rich in nutrients like sodium, potassium, vitamin B-6, magnesium iron, and vitamin C. This recipe also uses tapioca pearls which are high in calorie, so must be taken in small quantity. In this recipe, the tapioca pearls are used as a binding and texture agent. Don’t just read, try this recipe once.
P:S- the final recipe look will vary depending on the coarseness of the corns and the final binding of the balls. In some cases, the outer surface of the balls may be smooth, whereas in other cases, corn and veggies may protrude the surface, giving it a coarse surface texture. Any way, the taste remains delicious, if the ingredients are correctly used and your vegan kids won’t stop munching on them.
Ingredients:
- Sweet corn kernels: 300gms
- Red bell pepper: 1 medium; finely chopped
- Boiled mashed potato: 1 medium
- Parsley: 1 fresh bunch
- Grated ginger: 1 tablespoon
- Tomato: 1 medium; finely chopped
- Tapioca pearls: ½ cup; soaked and softened per instructions
- Soy sauce: 1 tablespoon
- White pepper: 1 teaspoon or more as per preference
- Organic sugar: 1 teaspoon
- Fresh basil: 2 to 3 leaves; chopped
- Salt to taste
- Corn starch: 1 tablespoon or more as needed
Instructions:
- Take the sweet corns and defrost if frozen. Now coarsely grind it in a food processor. The sweet corn should remain chunky.
- In a large mixing bowl, add the ground sweet corn, mashed potato, chopped parsley, chopped tomato, chopped bell pepper, grated ginger, basil, and the tapioca pearls and mix properly.
- Now add the salt, pepper, sugar, soy sauce and give a final mix.
- Add corn starch for binding. By now you should have a dough-like mixture.
- If you are unable to form balls from the mixture, add some more corn starch.
- Grease your hands with some cooking oil and form rounds from the mixture.
- Heat a deep saucepan and add oil for deep frying.
- Fry the cornballs until golden brown in color and serve hot with ketchup.
The tempting corn balls are ready. They will turn crispy on the outside and remain mushy and crunchy from the inside. Enjoy with a favorite dip while it is still hot. Let us know if you liked the recipe.
