But you must get your hands on baby potatoes and a good quality organic jaggery to make the perfect sauce. We’ve specified baby potatoes for the texture and beauty it adds to the dish. Taste is also affected but nonetheless, in case you can’t find the same, you’re well off with any variant, just cut into small pieces because you’ll need to stir the same and coat in the sauce.

Things you will need:

  • Baby potatoes– 300 Gms
  • Tamarind paste– 1 tablespoon
  • Organic Jaggery– 2 tablespoon
  • Cumin seeds- 1 ½ teaspoon
  • Cumin powder– 1/2 teaspoon
  • Chili powder– 1 teaspoon
  • Salt to taste
  • Sesame seeds to garnish

How to prepare crispy baby potatoes

  • Boil the baby potatoes until done to perfection. Insert a fork to see if it is cooked. Do not overcook. The boiling time depends on the type of potato. So best is to boil in a saucepan rather than pressure cook it.
  • Once the potatoes are boiled, cool them off. Now smash them between your palms such that they turn flat. Do not remove the peel.
  • Now heat oil in a pan and deep fry the potatoes until golden brown in color and crisp. Keep aside.
  • Now quickly heat another tablespoon of oil in a frying pan. Add some cumin seeds and let them splutter. Then add the jaggery and let it melt. Add the tamarind paste and mix properly. After a minute, add a cup of warm water and stir well to mix the sauce. Boil the sauce to 1/3 of the ratio.
  • Add in a pinch of sea salt and finally turn down the flame after adding a pinch of cumin powder.
  • Now mix in the fried potatoes well with the sauce.
  • Serve hot.
