Sometimes cooking can be a bit more time consuming than you can afford. Some days of the week you might need an easy recipe that will help you pack your lunch or snack in a jiffy. This particular wrap recipe used raw veggies and a mild dressing. It is healthy, nutritious, easy to make, and takes very little time to prepare. So here is a recipe for the on-the-go vegans (and for all) out there.

Ingredients:

  • Vegan tortilla: 2
  • Cherry tomatoes: 4-6
  • Boiled sweetcorn: 1 cup
  • Zucchini: 1 whole; cut in small cubes
  • Red bell pepper: 1 medium; chopped into small cubes
  • Tofu– two 4cm bars to lay flat in each wrap
  • Lettuce: 2 big leaves
  • Black salt: to taste
  • Maple syrup: 1 tablespoon
  • Cashew cheese– 1 tablespoon
  • Lime juice: 1 tablespoon or more to taste
  • Black pepper powder: to taste
  • Sesame oil: a drizzle

Instructions:

  • In a big bowl assemble all of the chopped veggies for the vegan wraps (zucchini, red bell pepper, cherry tomatoes) except the lettuce leaves and corn. Add salt, pepper, and some of the lime juice. Mix and leave it to marinate for half an hour.
  • After one hour you will find that the veggies will have released their moisture. Lightly squeeze out the excess moisture and transfer the veggie mix into another bowl.
  • Now add the final seasoning. You can avoid salt at this stage. Add the boiled sweet corn now.  Drizzle some maple syrup and the remaining lime juice. Add the sesame oil and some more black pepper powder.
  • Grill or shallow fry the tofu bars for one minute each side on low heat. Lightly salt them after frying.
  • Now dry roast a tortilla bread or grill it. Spread it on a plate. Smear the cashew cheese evenly. You can easily opt for other spreads like almond butter if you like.
  • Put the lettuce on top. Lay flat the fried/grilled tofu. Now add half of the prepared veggie mixture on the lettuce and wrap up. Slice the wraps into two pieces diagonally using a very sharp knife. You can eat it or pack it for later in an airtight container.

This recipe is as easy to make as it is delicious. It is packed with the goodness of vegetables and has a slight tang from the lime juice. The nutty aroma from the sesame oil is very appetizing.
