Infinity Stone-inspired Vegan Cake Pops for Avengers Endgame

After watching the highly anticipated Avengers Endgame movie, I can honestly say that as a die-hard Marvel fan, it was everything I wanted and more. What is an easy way to celebrate the movie’s success? Vegan cake pops! An even better way to celebrate? Infinity stone-inspired cake pops. With a simple boxed cake mix turned vegan (or your very own homemade cake if you want to get fancy), vegan food coloring and delicious vegan sprinkles, your at-home Avengers celebration is sure to be a success! This recipe is also great for any future Marvel birthday party your kid may want to have. Without any further stalling, here is how you can make infinity stone-inspired cake pops for your Avengers Endgame celebration.

Infinity Stone-inspired Vegan Cake Pops for Avengers Endgame

Ingredients:

For the cake

• Duncan Hine’s accidentally vegan boxed cake mix (I like classic yellow. To veganize the process, add one cup of applesauce and one cup of water to the mix)
• Egg replacer if necessary (it wasn’t in my case as I used applesauce)

For the frosting

• Vegan vanilla cake frosting, DIY or store-bought (such as Duncan Hines classic vanilla! I recommend buying two containers of frosting if you are doing store-bought)
• Vegan food coloring (such as Watkins) in the three primary colors
• Optional: Vegan sprinkles (brands such as Watkins or Meringue Shop, for example)

Instructions:

1. Bake your vegan cake as normal, whether it’s from scratch or from the box. Let completely cool before crumbling it into a large bowl (I just use my hands).
2. Slowly (about 2 tbsp at a time) begin to roughly mix in your vegan frosting. If using store-bought ingredients, I end up using about 3/4 jar of Duncan Hines frosting. Refrigerate for 30 minutes.
3. Using your refrigerated dough, make balls, cubes or even stone-like shapes using your hands. It will be a bit sticky but you’ll know the consistency is right if everything is staying together. Put a lollipop stick in each shape once it’s been made.
4. Once all your shapes are done, you will make the frosting. In six small dishes, separate frosting equally. Melt the frosting one color at a time (heated in 10-second intervals using a microwave) and add in the food coloring and mix well so that the color is even. Mix colors as you need to mimic the infinity stones.
5. Dip your cake pops into the colors and top with galactic vegan sprinkles before letting them cool in the fridge completely.
6. Enjoy with your other favorite Avengers Endgame treats such as a Spiderman Pizza or Star-Lord Galaxy Toast.
