Vegan Toffee Banana with a Hard Twist That Even Adults Would Love
Who doesn’t like toffees? I once came across a popular and delicious Chinese recipe that was a quirky version of the original Chinese toffee banana. I instantly liked it. Tried it. And loved it. Before you Make Vegan Toffee Banana:
Bananas are naturally free from fats, cholesterols, and sodium. They’re delicious and come with a variety of vitamins, minerals, and protein. This brilliant Chinese recipe would be great if your child doesn’t like eating ripe bananas directly. Although you won’t be giving this to a kid daily, occasionally this could make a great recipe.
- Bananas: 2, perfectly ripe, even over-ripe ones work well.
- Organic sugar: 200Gms, (100gms powdered, the other 100gms whole).
- Vegan Custard powder: 2 tablespoon
- Flour: 2 cups
- Corn flour: 2 teaspoon
- Fennel seeds: Crushed, 2 teaspoon
- Sesame seed for garnishing
- Ice water: 1 bowl (for the twist)
- Vegetable oil for frying
Step1: Make the batter using flour, corn flour, powdered sugar, fennel seed, and custard powder. Add water slowly to make a thick batter. A runny batter will ruin the recipe. So be careful. The batter should be thick enough to coat the banana properly.
Step 2: Cut the bananas into cubes such that each cube is 2 cm long. Heat vegetable oil in a thick bottomed pan. Dip the banana cubes into the batter and deep fry in oil in a medium to slow flame. Frying in the slow flame will make the coating crunchy.
Step 3: Heat up a frying pan. Put the rest of the sugar granules into it. Let the sugar melt in slow flame. Slowly it will turn into the caramel. When the sugar starts to change color, stir with a spatula to evenly caramelize the sugar. Once it attains a perfect golden color, ad in the fried banana cubes. Turn down the flame. Toss and coat each cube evenly.
Step 4: This is the twist step and you should do it only if you plan to eat and serve the banana toffee immediately. Take a large and deep bowl. Pour cold water to make it half full. Now add cubes of ice. Immediately take the hot caramel coated banana and dip in ice cold water with the help of a toothpick. Take out after a few seconds and see how the crust hardens to a crystal consistency. Sprinkle sesame seed and serve soon.
It is simple science. The warm sugar crystallizes when it comes in contact with the cold water. Thus, this process has to be done with a swift hand. The frying, caramel coating and cold bath have to be done in succession to achieve the desired result. If you do not want this part, the recipe is complete by Step 3. Simply coat in caramel and sprinkle sesame seeds and serve hot.
