Vegan Mac And Cheese Cups Your Vegan Kids Would Love

Cheesy, easy to eat, and perfect for vegan kids and adults alike, vegan macaroni and cheese cups will be your new favorite weekend treat to make for your family. Although you can make this recipe from scratch by making your own dairy-free cheese sauce at home, my favorite way to make this indulgent recipe is in a pretty lazy yet super effective way- with vegan-friendly boxed macaroni and cheese.

There are quite a few options on the market as far as dairy-free cheese goes, and the real star of the show will be the add-ins. This recipe features vegan bacon bits and bread crumbs, but anything is fair game! You can optionally try adding in jalapeños, diced onion, sun-dried tomato, or chives depending on your family’s favorites. Want to know how you can make these macaroni and cheese bites at home?   • 1 box dairy-free plant-based macaroni and cheese prepared according to package instructions (For this recipe specifically, I love using Amy’s Kitchen vegan mac & cheese but Daiya has a couple of options that come in a close second)
  • 1/3 cup shredded dairy-free cheese of your choice (choose a flavor to compliment the mac you made!)
  • 1/3 cup vegan bacon bits
  • 1/4 cup bread crumbs
  • Cooking spray
  • Salt and pepper to taste
  • Optional:
    • Cayenne pepper power
    • Chopped jalapeños
    • Diced onions
    • Chopped chives
    • Chopped sun-dried tomatoes

  1. Preheat your oven to 350 Fahrenheit.
  2. In a muffin tin (either normal sized or mini-muffin sized works) coat the pan with a light layer of cooking spray. You can optionally use cupcake liners instead.
  3. Transfer the prepared mac and cheese into a bowl and mix in your favorite add-ins! Here, we are adding in vegan bacon bits, salt, and pepper. If you like spicy food, I highly recommend adding in a dash of cayenne!
  4. Scoop the mac and cheese mixture into the muffin tin, so that each muffin mold is about 3/4 full.
  5. Top with additional shredded dairy-free cheese and a dash of bread crumbs.
  6. Bake in the oven for 10-12 minutes for normal muffins or 6-8 minutes for mini muffins or until the tops are golden brown.
  7. Once cooked, let sit for 5 minutes before serving and plate with a side of marinara sauce, vegan sriracha mayonnaise, or ketchup! Enjoy immediately or prep the night before for your kid to take to lunch (Just don’t forget to store them in the fridge overnight!)
