Summer Drink For Vegan Kids: Lychee Lemon and Mint Sorbet

Summer and sorbet walk hand in hand. Old and young alike love to have sorbet to refresh their palate. This particular sorbet is one of my favorites. I love lychee’s, and when it comes to sorbet I especially love mine with lychees. Lychee sorbets are delicious, palate cleansing and appetizing. You just need some simple ingredients and a bit of time to set the sorbet. This sorbet will give a wonderful twist to a classic sorbet recipe. We’ll add lychee, mint, and lemon, into a tender coconut base. Get making this delicious drink for vegan kids.

Summer Drink For Vegan Kids: Lychee Lemon and Mint Sorbet
Ingredients:
- Lychee– 500 grams; freshly deseeded
- Mint leaves– 3 to 4
- Lime juice– 1 and ½ tablespoons
- Cane Sugar– Two tablespoons (if needed)
- Tender coconut water– ½ cup (if available)
Instructions:
- Blend the lychee pulp along with the mint and lime juice until you get a thick paste.
- Add the tender coconut water and blend some more.
- You can add a bit of organic cane sugar if you like your sorbet sweeter than it naturally would be, but try to enjoy the natural tang of the lychee and lemon.
- Once blended to a smooth concoction, pour it into a bowl or any freezer-safe container. Make sure you cover the container and make it airtight.
- Freeze for 1 hour. Take out and blend again. The second blend will further smoothen the sorbet. It should be an icy and crystalline blend.
- Now pour the blend into the same container and smoothen.
- Freeze it again for another hour.
- Finally, using a scoop or spoon, scrape out the sorbet from the container and serve in bowls.
- Enjoy cool and brain-freezing sorbet straight out of the freezer.
